I don't see any reason, from a technical perspective, why such an adapter couldn't work. These companies have incentive to sell two USB-C adapters rather than one. Why? I have my suspicions that companies who make such adapters are attempting to make money from early adopters, and if they had made a simple USB-C to mini DisplayPort adapter it would have been backwards compatible with many of our old mini-DisplayPort to VGA/HDMI adapters. Unfortunately Dell gets around the issue by claiming that it only supports Windows PCs, and I haven't been able to find anything like a firmware update online for the monitor. What works on the Macbook Air now does not work on the new Macbook Pro.
